Kasane knife blade is crafted from hard high carbon stainless steel and the edge stays sharp a long time between sharpening. In addition to the steel material, our newly developed technology “ZERO EDGE” named after our achievement of making the thickness of the edge as close as 0.0 mm already at the grinding process of the blade and the final blade edging on “ZERO EDGE” results in super sharp and a long lasting edge. The handle is made out of Gifu Prefecture's natural wood from mountain cherry trees, which used to be disposed of or chipped. The special beauty unique to natural wood gives each knife its own aesthetics.
